7 layer cookie bars

When I woke up Monday morning, it was 66°F inside my house. Now, if you live anywhere north of the Mason-Dixon line, you’re probably playing a tiny, imaginary violin and making,”wah, wha” noises.

Sure, make fun of the cold-weather challenged.

Typically, it’s not this cold in Florida, this early in the peri-winter season. I’ve gone as late as mid-December before lighting the pilot on my furnace. That is going to change, but it can’t until this weekend.

The Mister is out of town on business, and since I’m also pilot-light-igniting challenged, I’m waiting until he gets home to avoid potentially blowing up our house.

In an effort to counter the indoor chill, I chose pro-active measures… baking.

I’ve also been on a tangent to clean out freezer contents, so I opted to dump suitable ingredients into a pan and make bar cookies.

Using a basic Eagle Brand recipe, I made a graham cracker base then layered on nuts, chocolate chips, coconuts and sweetened condensed milk.

I had partial bags of walnuts and macadamias, white and semi-sweet chocolate chips, and toffee chips to mix up the traditional layers. Then topped the whole pan with shredded coconut and Eagle Brand, and baked to a nice toasty, melty, gooeyness.

My house smelled delicious, and the added ambient heat was very welcome.

Seven Layer Magic Cookie Bars

1½ cups graham cracker crumbs
½ cup butter, melted
1 (14 oz.) can Eagle Brand Sweetened Condensed Milk
1 cup semi-sweet chocolate chips
1 cup butterscotch chips
1½ cups flaked coconut
1 cup chopped nuts

Preheat oven to 350°F.

In a small bowl, combine graham cracker crumbs and melted butter, mix well. Press crumb mixture firmly on bottom of 13×9 baking pan.

Pour sweetened milk evenly over crumb base. Layer evenly with remaining ingredients, press down firmly with fork. (I wait and pour the milk over the top of the pan after layering all the ingredients.)

Bake 25 minutes or until lightly browned. Cool completely. Chill if desired. Cut into bars. Store covered at room temperature.

  1. That sounds delicious. Unfortunately according to weather dot com right now, it’s colder in my town (at 19 degrees) than it has been since 1958 when it was at a low of 20 degrees. So. Call your waaaaahmbulance, lol!!
